Apple Cake

I have made several of these and they never fail to please. Don't forget the little bit of cinnamon in the icing for an added delight. I mix these by hand with a large plastic spoon in a plastic bowl. Easy to get the batter out and easy cleanup afterwards. You can use either plain flour or cake flour, but cake flour makes it much fluffier.

  • 3 large Eggs
  • 1 1/2 cups Oil
  • 2 cups Sugar
  • 3 cups Flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 2 teaspoons Vanilla
  • 1 cup Pecans
  • 3 cups Apples
  • -- Icing --
  • 4 ounces Margarine
  • 1 cup Brown Sugar
  • 1/4 cup Milk
  1. Mix all cake ingredients together and pour into 9 x 13-inch oblong pan.
  2. (This batter will be stiff, almost like a dough).
  3. Bake at 350°F for 45 minutes or until cake tester comes out lean when inserted in center of cake.
  4. Cook icing ingredients in small saucepan 2 1/2 minutes and pour over warm cake. One little secret to make this cake even better is to add 1/4 teaspoon of cinnamon to the icing..
