Gluten Free Carrot Cake

  • 2 1/2 cups gluten free flour mix
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp powdered ginger
  • 1/2 tsp salt
  • 4 large eggs
  • 2 cups sugar
  • 1 cup mayonnaise
  • 16 oz crushed pineapple
  • 3 cups carrot
  • 1 cup chopped walnuts
  1. Preheat oven to 350 degrees. In a bowl, stir together gf flour mix, baking soda cinnamon, ginger and salt.
  2. Set aside. In a lge bowl, beat together eggs, sugar, mayo and pineapple (with juice.) Gradually beat in flour mixture until well mixed. Fold in carrots and walnuts. Pour the batter into a greased 9 X 13 pan. Bake for 45min or until a toothpick inserted in the center comes out clean. Frost with cream cheese frosting if desired..
