Cranberry Pecan Rice Pilaf

Cranberry Pecan Rice Pilaf

  • 1 cup RiceSelect™ Texmati® Brown Rice
  • 2 tablespoons butter or margarine
  • 1 (14.5-ounce) can chicken broth, plus enough water to equal 2 cups
  • 1 cup Parmesan cheese
  • 1/2 cup dried cranberries
  • 1/2 cup toasted pecans
  • 1/4 cup green onions
  • salt and ground black pepper to taste
  1. Melt butter in 2-quart saucepan over medium heat. Add rice; cook and stir 2 to 3 minutes. Add broth and water; heat to boiling; stir once or twice.
  2. Reduce heat; cover and simmer 40 minutes or until liquid is absorbed. Remove from heat.
  3. Stir in cheese, cranberries, pecans and onions.
  4. Season to taste with salt and pepper..
