Libby's Great Pumpkin Cookie

Libby's Great Pumpkin Cookie

This is a family favorite.

  • 4 cups All purpose flour
  • 2 cups Rolled oats
  • 2 teaspoons Baking soda
  • 2 teaspoons Cinnamon
  • 1 teaspoon Salt
  • 1 1/2 cups Butter or margarine
  • 1 cup Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla
  • 16 ounces Pumpkin
  • 1 cup Chocolate chips
  • 2 cup Brown sugar
  1. Preheat oven to combine flour, oats, soda, cinnamon, and salt; set aside.
  2. Cream butter; gradually add sugars, beating until light and fluffy.
  3. Add egg and vanilla; mix well.
  4. Alternate additions of dry ingredients and pumpkin mixing well after each addition.
  5. Stir in chocolate chips.
  6. For each cookie , drop 1/4 cup dough onto lightly greased cookie sheet; more dough to form stem.
  7. Bake 20-25 minutes, until cookies are firm and lightly browned.
  8. Remove from cookie sheets; cool on racks.
  9. Decorate using icing or nuts.
  10. Yields about 32 cookies.
  11. Variation substitute 1 cup of raisins for cholate chips..
