Barley and Mushroom Soup

Barley and Mushroom Soup

  • 2 ts Oil
  • 1 md Onion
  • 3 c Fresh mushrooms
  • 2 Cloves garlic
  • 2 tb Dry white wine
  • 1/2 ts Dried thyme
  • 1 1/2 c barley
  • 1/2 c Soy flakes
  • 8 c Broth
  • salt and pepper
  • 2 tb fresh dill
  • 1 tb Dry sherry
  1. Saute the onion in the oil until translucent.
  2. Add mushrooms and garlic, stirring, for 2 minutes.
  3. Add the wine and thyme, saute another 3 minutes.
  4. Add barley, stir and saute another 3 min.
  5. Add the soy flakes and the broth, bring to a full boil and reduce to simmer, for 40 min.
  6. Season with salt and pepper, stir in sherry and dill.
